Huge fluffy pancakes - more than twice the usual size - topped with salty bacon and maple syrup, mouth-watering burgers and milkshakes are on the menu at a new American diner.
"I always had it in my head to open on this day even though it's a Wednesday and everyone's at work," said Beckie, who only got the keys to the property in February and revamped the empty shell in super-fast time. "When I saw it I just thought it’s an American diner. I have been to America plenty of times. My family are from California and San Diego. I've had a really good response to the menu - everyone was saying 'I can't believe how much choice you've got' because the kitchen is so small but I didn't want to do a small menu. I wanted choice."
It's three years since she opened Nissi's Gourmet Burgers in Wollaton Street - a back street parallel to Derby Road - where she was helped by chef Tyler Joyce, who has relocated with her."It was so busy but it was so lonely at the same time. The only people you'd get to speak to were the delivery drivers," she said.
"I'm vegetarian. It really pains her, all this fabulous food she cooks and I can't eat it but it gives her a good insight as well as she asks for my opinion on the vegetarian side. She's brilliant at what she does - she knows her stuff. With the portions, people will not go hungry. When people see the menu and the portion size, I think they'll be pleasantly surprised."
